Mirpoa: benefit and harm


Today, various spices and soup greens are widely used in cooking.Mirpois is one of the varieties of such mixtures.It includes fresh vegetables: celery, onions and carrots in proportions of 1: 2: 1, respectively.

Homeland mirepois is France, but it is used in kitchens and other countries.The composition of the mixture may vary depending on the preferences of a particular people, but the original three ingredients remain unchanged.

Interesting! The first mention of mirpu is dated XVIII century.It is named after the French ambassador and field-marshal Charles-Pierre-Gaston Francois de Levi Mirpoa.There is also a white mirpu - in this case, instead of carrots, parsnip is added to the mixture.

Composition of product

The classical mixture contains a rather extensive set of useful substances:

  • vitamin complex: A, C, K, PP, D, E, almost the entire line of vitamin B;
  • minerals: cobalt, phosphorus, sodium, manganese, iodine, iron, potassium, calcium, copper;
  • fatty acids and essential oils.

Depending on the additional ingredients and the country where the vegetables were grown, the composition may vary or be supplemented.

Mirpois is a low-calorie mixture.At 100 grams, there are only 38 calories.

Important! Since the mixture is a real storehouse of vitamins, adding it to the menu of pregnant women is only welcome.

Useful properties

As the product includes carrots, primarily its use has a beneficial effect on eyesight. Also this vegetable has a positive effect with the following problems :

  • vascular and heart disease;
  • Pneumonia, asthma, tuberculosis;
  • chronic liver and kidney disease;
  • various skin diseases;
  • Gastritis with low acidity.

Mirpua Celery has a beneficial effect on the nervous system, is useful in diabetes mellitus, and is also indicated for older people, since it has the property of regulating water-salt metabolism in the body.Also, this vegetable slows down aging and positively affects the health of the skin.

Onion is the No. 1 remedy for germs and viruses.Phytoncides, which are part of the vegetable, are actively fighting with dysentery and diphtheria bacillus, tuberculosis bacteria and streptococci.In addition, eating onions has a positive effect on kidney health.

Important! The harm of mirepu can only be applied in one case - if there is an individual intolerance to the vegetables included in it.But this happens very rarely.

Application in cooking and useful advice

Usually mirepoo add soups and broths.However, you can use the mixture as an ingredient in meat and fish sauces.It is prepared from fresh vegetables, sold in stores in a frozen form.But it is possible to prepare mirepois on its own - there is nothing complicated in this. On a half kilo of the finished mixture it is necessary :

  • take 250 grams of onions and 125-130 grams of carrots and celery;
  • cut the vegetables into small cubes;
  • lightly fry, using a spoon of vegetable oil.

This treatment will give a very aromatic seasoning, which gives the dish a piquancy.

Tip! For "fast" soups, for example, fish vegetables are cut very finely.The longer the broth is brewed, the larger the cutting is required.
