Yogurt should be drunk reasonably and in moderation. Doctors note that the fat content of the product should not exceed 1%. Fermented milk products and yogurt are allowed to be introduced into the patient's diet after a week from an exacerbation. As a rule, fasting becomes the first measure, then it is allowed to drink yogurt, milk, and other drinks.

Yoghurt is not used in combination with other foods, as a dessert or as a supplement. Most often, the product is used on its own - for example, as a drink before bedtime. It is advisable to observe the dosage: starting with 50 grams per day, ending with a glass of yogurt per day.

If the patient suffers from chronic pancreatitis while in persistent remission, the requirements change. The fat content rises to 3.2%, yogurt is allowed to be consumed independently and with other products. An effective option is to mix yogurt with vegetables or fruits. Chosen gourmets use yoghurt as a salad dressing.

How to make yogurt to treat pancreatitis yourself

Yoghurts sold in stores often lack the health benefits advertised on TV. Even if the qualities are present initially, after transportation from the place of manufacture to the store, beneficial bacteria die, microorganisms have a short lifespan - no more than two or three days. If there are no factories near the patient's place of residence where locally produced dairy products are made, the best advice is to make yogurt yourself. It turns out to be simple and tasty.

It's good if there is a yogurt maker on the farm. It will be possible to cope with the task without the help of the device. For cooking, you will need milk and a special ferment with bacteria resistant to gastric juice (gastric juice destroys the necessary nutrients).

Choosing milk

Milk needs to be boiled for several minutes. If you buy milk from a store, choose pasteurized or UHT milk. The first should be heated, the second is not necessary, because safety measures have already been taken. You will have to warm it up if the milk is cold. The resulting film is removed.

After boiling, the milk is cooled to 38-45 degrees. To determine the temperature, use a thermometer; if not, it is enough to drop a little milk on your hand. The effect of prepared milk can be described in a similar way: hot, but not scalding. It is better to underheat milk than overheat - when overheated, lactic acid bacteria die, which should not be allowed.

It is required to heat milk in a stainless steel saucepan, preferably with a thick bottom.

The industrial starter culture is sold in grocery stores, pharmacies, and online stores. Bacteria present in typical yoghurts are pre-added to the substrate. Starter cultures are prepared according to approved standards, but when you make yoghurt yourself, it is difficult to achieve store-bought taste. For cooking, it is permissible to use industrial bioyogurt.

After preparing the food, proceed directly to cooking. Mix warm milk and sourdough / yogurt. 125 ml of yoghurt consistency per liter of milk. You should not add starter culture to milk, do the opposite. When pouring milk, do not forget to stir until a homogeneous consistency is formed. Dilute the remaining milk in it.

With pancreatitis, a pleasant sour milk taste will be a consolation. Remember, you can't take yogurt cold - warm it to room temperature - and drink it to your health.
