Eggplants with pancreatitis: can or should not be?
Eggplant is a perennial vegetable culture of the Solanaceae family. His homeland is China and India, where they can still be seen in the wild today. The first of the Europeans to learn about these blue and purple berries was recognized by the warriors of Alexander the Great in the 330s BC, but for the European cuisine they were discovered only after a millennium, during the Arab expansion.
In the 17th century, heat-loving eggplants came from Persia to the South Russian provinces of Russia, where they quickly took root, deserved for their wonderful taste from the local population, a deserved recognition and affectionate name "blue".Today, these vegetables, which are not only beneficial for the body, but also have certain healing properties, are widely used in cooking: their salt, canned, dried, frozen, consumed in fried, boiled or stewed, and in the form of caviar. But is it possible to eat eggplant in pancreatitis? Will they harm the weakened ailment of the pancreas?
Use
Eggplant fruits contain approximately :
- 0.1% fat;
- 0.2% organic acids;
- for 1.5% protein and fiber;
- 4% sugars;
- 5.5% carbohydrates;
- 90% water.
In addition, this vegetable contains :
- such vitamins as B6, PP, C, B2, A, B9, B1 and beta-carotene;
- various mineral substances, including potassium, fluorine, sodium, calcium, zinc, magnesium, iron, aluminum, cobalt, boron, iodine, copper, molybdenum, sulfur, chlorine and phosphorus.
Due to the low carbohydrate content, eggplants are low-calorie, which makes them suitable for eating people who are overweight and who suffer from diabetes mellitus. These vegetables are also useful to introduce into the diet when:
- various cardiovascular, intestinal and gastric diseases;
- disorders of kidney and liver function;
- gout;
- atherosclerosis;
- constipation;
- swelling of the lower extremities.
Vegetables in the acute and chronic period of the disease
For all these useful qualities, these vegetables are absolutely contraindicated for a variety of reasons in acute pancreatitis.
It is proven that eggplants:
- contain substances such as alkaloids, phytoncides and ascorbic acid, which can lead to the activation of pancreatic proenzymes and convert them into inflammatory enhancing enzymes;
- , due to the high sugar content, load the insulin producing insretor apparatus of the weakened pancreas;
- strengthens the bile secretion, which in case of abnormalities in the operation of the valvular apparatus can lead to the ingress of bile into the pancreatic ducts and the activation of proenzymes there;

Return "blue" in the diet can only be after complete rehabilitation of the pancreas after suffering acute inflammation. During a period of persistent remission of the disease, these vegetables are recommended in boiled form, for example, as an ingredient in soup.
If the product does not cause negative changes in the patient's condition, you can gradually introduce baked or braised eggplant. In this case, the fruits should be pre-soaked in salt water to get rid of the bitterness.
With the positive tolerance of eggplant, their use can lead to a positive effect of these vegetables on the body, including:

The most useful products with a weakened pancreas are vegetables, but it must be remembered that not all of them can be useful and can be used with caution. And eggplant in this case is no exception.
